If you’re like me, you started baking sort of blindly. I didn’t know the secrets, I didn’t have nearly enough mixing bowls, and I thought I was the only baker in the world with the most inadequate kitchen. But every kitchen has its limitations, unless you’re a professional bakery (but sometimes limitations apply there as well!). What makes a good baker is recognizing those limitations, and working around them to succeed.
